Stir fry chicken and veggies is a great week night meal. Stir fry veggies can be found prepped and available in the produce section at the grocery store. Throw in some marinated chicken breast, make your sauce, and you're eating in minutes.
Let's Talk Flavor
The standard Asian medley includes garlic, ginger, onion, sesame, and soy. So, if you are in the mood for something Asian and want to eat in, get these out to start. You can make a quick sauce or marinade with these basics, and add in ingredients like rice wine vinegar, sugar, white pepper or red pepper flakes. You'll end up with a complete umami dish. I'm going to mix up my sauce and use half for cooking and the other half for pouring over before serving.
An added bonus to Asian cuisine, it makes gluten and dairy free eating a breeze. I don't feel like I'm missing out on anything. And with Bragg Liquid Aminos, this is soy free also. Winner-winner, chicken dinner...
The Veggies
One of the great things about stir fry is that so many vegetables fit in so well. When I was at the store this week, I was inspired by a coleslaw mix and broccoli slaw. So, that's where I'm starting. I always have some sort of onion on hand, and this time I'm going with green onions because I feel fancy when I have a fresh herb garnish. There are no limits though. Bell pepper, mushrooms, celery, snow peas, spinach, and on and on and on....
The Chicken
I've become a major believer in cooking chicken in the air fryer. It comes out tender and juicy consistently. One of my pet peeves in life is over OR under cooked chicken. Also, this is marinade is so strong, it really can be done right before you cook. I only marinated my chicken for as long as it took the veggies to cook, and it still packed a punch.
*If you don't have an air fryer, this entire meal can be done in a wok or large skillet. However, I would thinly slice the chicken versus big chunks.

Chicken and Veggie Stir Fry
Equipment
- Air Fryer
Ingredients
- 2 chicken breasts
- 1 bag coleslaw mix
- 1 bag broccoli slaw mix
- ¼ cup Braggs liquid aminos plus 2 tablespoon for veggie mix
- ½ teaspoon sesame oil
- 2 tablespoon corn starch
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon red pepper flakes
- ¼ tsp white pepper
- ¼ teaspoon ginger powder
- 2 tablespoon olive oil
- 1-2 green onions thinkly sliced (green part only)
Instructions
- In a large bowl combine sauce ingredients: liquid aminos, sesame oil, garlic, onion, ginger, white pepper, and red pepper flakes. Reserve 3 tablespoons and set aside for later. Then add cornstarch.
- Dice chicken and add to bowl with marinade. Stir to coat completely. Set aside.
- In a large bowl, empty both bags of veggie slaw. Drizzle with olive oil and 2 tablespoons of liquid aminos.
- Pour veggies into the air fryer basket and cook at 375F for 15 minutes. Give the veggies a shake and stir them around halfway through the cook time.
- Remove veggies to a bowl and set aside. Now add the marinated chicken. Cook at 390F for 13-15 minutes, again stirring halfway through.
- Check one piece of chicken for doneness just to be sure. When it is finished, remove to a bowl for serving.
- Plate veggies on the bottom and top with chicken. Garnish with thinly sliced green onions and a drizzle of the reserved suce.

I was very proud of this dish the first time I made it and it's definitely a keep. The stir fry chicken and veggies has a balance of salt and heat. I can make it quickly with minimal clean up. Lastly, a serving of white rice will fit right in if you want to bulk up this meal and stretch it even further.
