Apple and Cardamom Cookies

A warm and decadent cookie flavored with apple butter, cardamom, and cinnamon.

Ingredients

  • ¾ cup unsalted butter
  • 1 cup granulated sugar
  • 2 eggs
  • ¼ cup Apple butter
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cardamom
  • ½ teaspoon cinnamon
  • ½ teaspoon salt

Cream Cheese Frosting

  • 1 8 ounce package of cream cheese
  • ½ cup powdered sugar
  • ½ teaspoon vanilla extract
  • ½ tsp lemon juice

Instructions

  • Preheat oven to 350F.
  • In a large mixing bowl or stand mixer, combine room temperature butter and the cup of granulated sugar. Using a paddle attachment, turn the mixer on low for 1-2 minutes until the butter and sugar are combined.
  • Add the eggs to the butter and sugar, mix to combine just until the egg is incorporated. Scrape down the sides of the mixing bowl with a spatula if needed.
  • Next, add in the apple butter and vanilla.
  • In a separate bowl, measure the flour, salt, baking powder, cardamom, and cinnamon.
  • Add half of a cup of the dry ingredients to the wet ingredients and turn the mixer on low. Continue adding the dry ingredients in ½ cup increments until the wet and dry have combined completely.
  • Spray a cookie sheet with non stick spray. Spoon out cookie dough into small piles, about 1 and ½ inches in diameter.
  • Bake bookies at 350 for 11 minutes. The cookies will be tender and soft.
  • Remove cookies and allow to cool completely.
  • Eat as is or add a layer of cream cheese frosting. .

Cream Cheese Frosting

  • Make the cream cheese frosting by mixing together 8 ounces of creams cheese, ½ cup powdered sugar, vanilla and lemon juice. Mix well until smooth.
