Start by preheating your pellet grill to 375°F. Let it heat for 15 minutes with the lid closed while you prepare the heads of garlic.
Take a whole bulb of garlic and turn it on its side. Cut off the top so that each clove is exposed.
Place the cut bulb of garlic in the center of a foil square. Drizzle with a little olive oil and season with salt. Fold the sides of the foil up and pinch it together so you have a little closed bundle.
If you are making a big batch, drop each bulb of garlic in a spot of a cupcake tin. Drizzle with olive oil and season with salt. Cover the whole pan with foil.
Place the wrapped garlic directly on the grill grates and close the lid. Cook the garlic like this for 45-60 minutes.
Remove the garlic from the smoker when the cloves are tender and golden brown.
Let the garlic cool off just a bit before handling. Once you can safely handle the garlic, squeeze the soft cloves out and use as desired.
