Christmas Rice Krispie Treats

Christmas Rice Krispies treats are a classic marshmallow treats with Christmas sprinkles and white chocolate folded in with a thick white chocolate coating and festive decorations on top.

Equipment

  • 9x9 Clean Edge Pan
  • parchment paper
  • Nonstick spray (for securing the parchment paper to the pan)
  • disposable piping bags
  • Large Pot and Large Spoon or spatula

Ingredients

  • 7 cups Rice Krispie cereal
  • 10 cups Mini Marshmallows
  • 6 tablespoons Unsalted Butter
  • ½ teaspoon Vanilla Extract
  • 1-2 tablespoons Holiday Sprinkles
  • ½ cup Red and Green Mini M&Ms
  • ½ cup White Chocolate Chips
  • 22 ounces White Melting Chocolate

Instructions

Making the Rice Krispies Treats

  • Set a large pot over medium-low heat. Add the butter.
  • After the butter has melted, add the marshmallows and vanilla. Stir really well.
  • When the marshmallows have melted completely, shut off the heat and add the Rice Krispies, Christmas sprinkles, white chocolate chips, and ¼ cup of the m&m's.
  • Fold that together until it's evenly combined.
  • Transfer the Rice Krispies cereal mixture to a 9x9 clean-edge baking dish lined with parchment paper.

Adding the Chocolate Coating

  • In a microwave safe bowl or measuring cup, melt 2 bags of white chocolate melting wafers. Stir the melted chocolate really well until it's completely smooth.
  • Pour the melted chocolate over the Rice Krispie treats in their pan and use a spatula to spread it into an even layer.
  • Set aside at room temperature until the crispy treats have set.

Cutting the Rice Krispies Treats and Finish with Decorations

  • After the chocolate has set, remove the Rice Krispies treats with the parchment from the pan. Use a knife to gently score lines in the chocolate shell. Do no cut all of the way through the chocolate shell in one attempt. After you have marked your lines, gently slice a little deeper across all of the lines until you are able to cut through the Rice Krispies treat layer without cracking the chocolate shell.
  • Using a disposable piping bag, add stripes of chocolate drizzle to the top of a rice krisipes treat square. Before the chocolate drizzle sets, add sprinkles and mini m&m's.
  • Serve as soon as the chocolate sets or store in an airtight container until you are ready to serve.
