Twice Smoked Spiral Ham on a Traeger

Store-bought ham gets a flavor upgrade with a brown sugar glaze and extra smokey flavor by cooking low and slow on a Traeger Pellet Grill.

Ingredients

Ham

  • 8 pound precooked spiral ham
  • ¾ cup chicken stock

Glaze Ingredients

  • 1 Brown sugar glaze packet
  • 2 tablespoon Dijon mustard
  • 2 tablespoon apple juice
  • 1 tablespoon pork and poultry rub

Instructions

  • Smoke directly on grill grates at 250 for 1 hour 30 minutes.
  • Transfer to cast iron pan and add ¾ cup of chicken stock and increase the heat to 275F.
  • Cook until the internal temperature hits 130F.

Make the glaze:

  • In a small saucepan over medium heat combine the glaze packet including with the ham and add the dijon mustard, apple juice and BBQ rub. Stirring the mixture well and bring up to a boil. Reduce the heat to medium low and cook for 5-8 minutes until the sugar has completely dissolved.

Finish the Ham

  • Once the ham reaches 130F, turn the ham on its side. Pour the glaze over the ham. Increase the temp to 350 and cook for an additional 15 minutes.
  • Remove the ham from the Traeger and cover with foil. Let it rest for 30 minutes before slicing and serving.
