Smoking the Spiral Ham
We are elevating a pre-cooked ham and adding special flavors to that classic brown sugar glaze like a favorite BBQ rub and tangy dijon mustard. This recipe start with a pre-smoked ham that can be found around that holidays in most grocery stores.
My favorite spiral ham and the only one I will actually buy is the Kirkland Signature spiral cut ham from Costco. The value and the sweet flavor from their ham can't be beat!
The Best Ham Glaze and Ingredients

Using Glaze Packet included with your ham:
- glaze packet
- 2 tablespoon dijon mustard
- 2 tablespoon apple juice
- 1 tablespoon Traeger Pork and Poultry Rub (or your favorite rub for smoked pork)
Homemade Glaze if your ham did not come with a glaze packet:
- 1 cup brown sugar
- ¼ cup maple syrup
- 2 tablespoon dijon mustard
- 2 tablespoon apple juice
- 2 teaspoon apple cider vinegar
- 1-2 tablespoon favorite pork rub
Following either recipe above, combine all of the glaze ingredients into a small saucepan and place over medium heat. Bring the glaze mixture up to a low bubble and cook for 10 minutes or until the sugar has completely dissolved. Turn off the heat and set aside until you are ready to glaze the ham.

Helpful Supplies to Help the Process
This is a really east method for adding extra flavor during the cooking process and a few kitchen items make it even easier:
- Large cast iron skillet OR disposable aluminum pan
- wireless meat thermometer or the attachable wired thermometer that came with your Traeger Pellet Smoker
- Large Cutting Board
The Wood Pellets for Ham
You have a few options for wood pellets. Hickory wood pellets will infuse a little bit more smokiness to the ham. Apple, maple, and cherry wood are also good options. You can of course use a signature blend, it just won't have a much flavor, but that's totally okay for this spiral ham recipe.
How to Make Twice Smoked Ham

- Set your pellet smoker to 250F and preheat with the lid closed for 15 minutes.
- Remove the ham from packaging and place ham directly on the grill grates to smoke for an hour and a half.
- Transfer the ham to a cast iron pan or disposable tray. Add ¾ cup of chicken stock and insert a meat thermometer into the center of the ham.
- Follow instructions above for making the glaze.
- When the internal temperature of the ham reaches 130˚F, turn the ham on its side and pour the glaze over the top of the ham or brush the outside of the ham with the glaze.
- Increase the temperature of your smoker to 350˚degrees F. and cook for an additional 12-15 minutes.
Mustard Dipping Sauce
This Traeger spiral ham really gets an upgrade with a tangy sauce to break up the sweet and savory flavor from the ham. It's a pretty simple recipe and it's my go-to for other cuts of pork like tenderloin and even chicken tenders.
- 2 tablespoon dijon mustard
- 1 tablespoon whole grain mustard
- 2 tablespoon mayonaise
- 1 tablespoon honey
- ¼ teaspoon smoked paprika
Combine all the mustard sauce ingredients in a small bowl and mix well until it's combined.
Tips and troubleshooting

Cook time may vary depending on the size of your ham. For an 8-pound ham, the total time should take about 2 ½-3 hours. Larger ham will take longer.
Speed up the cooking process by covering the whole ham with aluminum foil when you transfer the ham to a with the chicken stock.
For more even cooking, take the ham out of the refrigerator and let it come up to room temperature for an hour before placing in the pellet smoker.
The Perfect Holiday Meal

This has become one of my favorite holiday recipes. The sweet and savory flavors of your double smoked ham deserve some great side dishes that can hold their own. For a classic Easter dinner, these are my favorites:
- Traeger smoked au gratin potatoes OR Potatoes Dauphinous
- Green Beans or Traeger Brussel Sprouts
- Traditional soft rolls
- Cranberry Walnut and Blue Cheese Salad
Saving and Reheating Leftovers
Transfer leftover ham to an airtight container and store in the refrigerator for up to 5 days. You can also freeze slices of ham after they have cooled completely in vacuum sealed bags for up to 6 months.

Twice Smoked Spiral Ham on a Traeger
Ingredients
Ham
- 8 pound precooked spiral ham
- ¾ cup chicken stock
Glaze Ingredients
- 1 Brown sugar glaze packet
- 2 tablespoon Dijon mustard
- 2 tablespoon apple juice
- 1 tablespoon pork and poultry rub
Instructions
- Smoke directly on grill grates at 250 for 1 hour 30 minutes.
- Transfer to cast iron pan and add ¾ cup of chicken stock and increase the heat to 275F.
- Cook until the internal temperature hits 130F.
Make the glaze:
- In a small saucepan over medium heat combine the glaze packet including with the ham and add the dijon mustard, apple juice and BBQ rub. Stirring the mixture well and bring up to a boil. Reduce the heat to medium low and cook for 5-8 minutes until the sugar has completely dissolved.
Finish the Ham
- Once the ham reaches 130F, turn the ham on its side. Pour the glaze over the ham. Increase the temp to 350 and cook for an additional 15 minutes.
- Remove the ham from the Traeger and cover with foil. Let it rest for 30 minutes before slicing and serving.
