    Easy Strawberry Sorbet

    I've been making this easy strawberry sorbet a few times a week lately. My son, Jack, and I battle over dessert. However, this is one that we are both super excited about. It meets all of the nutritional requirements that are important to me. It's low in sugar, organic, gluten and dairy free. Aside from that, it takes just 10 minutes to whip up, so I'm not deterred by a long process. Jack loves it because fruit flavored desserts are his favorite. He would the whole thing in one serving if I let him.

    The ingredients for easy strawberry sorbet are great because these are staples in my house. The honey, almond milk, and orange juice are all a great value from Costco which I always have on hand. The almond milk mostly goes in my coffee, but I also like it for smoothies. Orange juice is our breakfast drink of choice. And honey is a good sweetener over table sugar. As for the frozen strawberries, those get rotated in and out. I also love the berry mix and frozen smoothie blends Costco offers, so we don't get bored with one fruit all of the time.

    The Process

    This sorbet really whips up fast, mostly because the ingredients are cold and the frozen strawberries make the sorbet set up in no time. The ingredients go into a blender. The strawberry seeds get strained out. I blend it one more time and adjust for sweetness if needed. Then it either goes into an ice cream maker for an instant sorbet or it goes straight to the freezer to eat later. Done.

    Really, if you think about it, sorbet is just a frozen smoothy. Maybe with more sugar. This recipe can also be used for popsicles. Or... it can also be used for a cocktail. Throw in vodka, rum, or tequila and you have a frozen cocktail meant for a pool party. Tread lightly though. It's tasty.

    Lastly, I will say this does have a slightly floral flavor from the honey. If that's not your jam, use simple syrup. Combine ¼ cup of granulated sugar with ¼ cup a water and microwave for 1 minute. Stir so the sugar dissolves well.

    Equipment

    • blender
    • strainer
    • ice cream maker (optional)

    Ingredients

    • 3 cups frozen strawberries
    • ¾ cup orange juice
    • ½ cup almond milk
    • ¼ cup honey or simple sugar

    Instructions

    • Combine all ingredients in a blender.
    • Crush/blend and scrape down sides as needed to evenly combine.
    • Place a strainer over a bowl. Using a spatula, push the sorbet mixture through the strainer to remove the seeds.
    • Taste the sorbet for sweetness and add honey or simple syrup if desired. Blend one more time if adding in extra sweetener.
    • Pour sorbet into ice cream maker and churn sorbet. It only takes a few minutes. Or put in freezr safe container and freeze for two hours.
