Y'all, these smoked beef dip sliders are one of my absolute favorite appetizers to make for any occasion- whether you are looking for the best game day recipes or easy small bites for a party. Toasty Hawaiian sweet rolls get a seasoned buttery topping. Inside, we layer thinly sliced roast beef with provolone cheese and tasty au jus. These little sammies are the perfect bite for hungry children and parents alike.

What Makes These Sliders So Delicious

For starters, I love beef dip sandwiches. The simplicity of flavorful roast beef with a delicious chewy bread and dipping sauce has had my heart since I was a kid.
When smoked sliders gained popularity, I was super excited to try these at home.Β
Anything that combines a melted butter, beefy au jus dipping sauce, and fluffy sweet Hawaiian rolls has to be dynamite packed with flavor. Keeping the inside of the sandwich super simple with store bought roast beef and melty provolone cheese is such a winner. You're gonna want to make this for a fun party appetizer, but I bet your kids love them so much, you make them for an easy weeknight dinner too.Β
Beef Dip Slider Ingredients

Quite possibly the best part of these sliders is that the ingredients are so simple, even the pickiest eaters will enjoy them. I do have recipe modifications below, so if you like it a little fancy, go ahead and upgrade.
- Hawaiian Rolls OR 12 slider buns
- Deli roast beef - one pound
- Provolone cheese - 10-12 slices of cheese
- Butter - 5 tablespoons
- Italian seasoning OR granulated garlic and dried parsley
- Au Jus
The Dipable Au Jus

The reason I really love these little French dip sandwiches is the dip part. There is nothing better than to dip a delicious French roll into the seasoned beef broth.
- Beef consommΓ© OR beef broth
- Worcestershire sauce
- Black pepper
- Garlic powder or granulated garlic
How To Assemble The Sliders

- Preheat your Traeger to 375F. (you can also make this in your oven).
- Start by combining the ingredients for the au jus in a small pan and place it over medium heat.
- Soften the butter and add 1 teaspoon of italian seasoning and β of a teaspoon of garlic powder.
- Using a serrated knife, cut through the center of the sandwich rolls. Remove the top and set aside.
- Brush a thin layer of butter on both sides of the rolls.
- Remove the au jus from the stove, to dip the roast beef and layer the slices on the bottom later of the rolls.
- Next, layer the slices of provolone cheese and place the top buns back on the cheese.
- Brush the top of the rolls with the seasoned butter mixture.
- Transfer the rolls to your baking sheet or aluminum tray.
- Place in the Traeger and close the lid. Cook for 15-20 minutes or until the cheese is gooey and melted.
- Remove the sandwiches from the heat and serve with the au jus for dipping.
How to Make Sliders On A Traeger Grill

I am always here for a good Traeger recipe. We take a delicious slider and heat it up outside for the best smoked French dip sandwich imaginable. The tops of the rolls will have a beautiful golden brown and the inside is filled with melted cheese and beef.
After you assemble the mini sandwiches, transfer the, to a baking dish, small sheet pan, or disposable aluminum tray. This is just to make it easier to get the sliders and off the grill.
Helpful Supplies For Smoked Sliders
- serrated knife
- quarter sheet pan or aluminum pan
- small sauce pan
- pastry brush
Recipe Modifications
Upgrade the French dip flavors with caramelized onions. Thinly slice sweet yellow onion and cook on medium heat in butter until they are soft and caramelized.
For the cheese, you can change up and instead of provolone use swiss cheese or cheddar.
βNow that you know the temperature, cook time, and basics of making sliders on the Traeger- mix it up. You can make these little sandwiches with leftover beef, change it to turkey and cheese, or use BBQ pulled pork. Bottom line, there are plenty of slider recipes you can make now that you have these under your belt.
Don't have a smoker? You can make this in the oven all the same. Just set the oven to 375F and bake for 15 minutes.
Saving Leftovers

I have good news and more good news. First, you don't need anything special to save leftover sliders, just any airtight container that they fit it. The second good news is you reheat them in the microwave or oven. When you are ready to eat one or three of these the next day, just heat them for about 20 seconds per sandwich if you are reheating in the microwave.
Save the leftover dipping sauce in its own separate container, but I feel like you already know that.
