You get to pick the kind of chocolate you want to use. Semi-sweet chocolate keeps the overall sweetness in check. It also looks really great with the contrast of white chocolate drizzle. I also feel like you can't go wrong with milk chocolate, so whatever you want is good with me. White chocolate really makes the color of candy and sprinkles POP.

You have 3 options for melting the caramel and chocolate for dipping. My most recent favorite is to use two small crockpots. It's less work. Another option is to set up a double boiler, which is perfectly fine. It just requires more watching and a careful eye.
Lastly, you can also use a microwave-safe bowl and melt in the microwave. You'll want to heat the caramel and chocolate separately in 30-second intervals, stirring in between.

Step-By-Step Instructions

Before you start heating anything, set up your complete station and get organized for an easy assembly line.
- Lay out the pretzel rods on a sheet pan lined with parchment paper.
- Begin by melting your caramel. Stir the caramel well. Dip each pretzel rod in the caramel and remove any excess caramel so you have an even coating. Lay the caramel-dipped pretzel rods on the silpat.
- Once the caramel on the pretzel has cooled enough to handle, using gloved hands, smooth out the caramel in an even layer. After that, you can dip into the chocolate.
- Melt your chocolate using your desired method and stir the chocolate really well.
- Dip the pretzel rods and shake off excess chocolate. If you are adding sprinkles or crushed candy, add it now before the chocolate hardens.
- Lay the pretzel rod on the parchment while the chocolate shell hardens.
- If you are adding chocolate drizzle, add that after the chocolate shell has hardened completely.Β

Saving Instructions
After the chocolate pretzels have set and the shell has hardened, you can store them in an airtight container. You can keep them at room temperature and do not need to refrigerate them. Just keep them in a cool dry place.
Save leftover chocolate in a sealed container such as a zip top bag. This is the easiest way to reuse chocolate when you need it again. After it hardens in the bag, you can easily break it into pieces which makes melting again pretty quick.
