    Can You Freeze Genoa Salami? Quick Guide

    The short answer is: Yes, you can freeze Genoa salami. In order to save extra salami or deli meat, you need to package it in the best way possible to prevent freezer burn and maintain quality.

    So, you just got back from the grocery store and have a serious supply of salami. And I bet the trip wasn't cheap, either. Now, in order to get the biggest bang for your buck, we need to do a little planning. We are going to strategically extend the shelf life of your salami and avoid food waste. 

    How to Freeze Cured Meat with a Vacuum Sealer

    For best results, you'll want to remove excess air from the airtight container you store the salami in. Using a vacuum sealer like a Food Saver is my favorite way to do this.

    Divide the salami into the portions you will most likely use down the road. Lay a small piece of parchment paper in between each portion. Then remove the air with your vacuum sealer and seal the bag.  

    Freezing Salami Without a Vacuum Sealer

    If you don't have a vacuum sealer, you'll want to wrap the meat in plastic wrap to before placing it in an airtight container like a zip-top bag. You can add an extra layer of protection by using plastic wrap, then a layer of aluminum foil, then saving it in a plastic ziploc bag.

    Thawing Out Frozen Charcuterie

    The ideal way to that out frozen salami is overnight in the refrigerator. If you used a resealable bag, just take out the portion of salami or other lunch meat fro the bag. Transfer the portion to a different airtight container and keep it in the fridge until the next day.

    If you didn't plan ahead, you can also lay out individual slices at room temperature and they should be ready to use within two hours. 

    Note: Do not refreeze genoa salami or meat for that matter after it has been frozen and thawed out already. 

    How Long Does Salami Last in the Freezer?

    In order to maintain quality of texture, you can keep your salami in the freezer for 2-3 months. That's a nice long shelf life without compromising the robust flavor of salami that we all know and love. 

    How Long Can I Keep Cold Cuts Refrigerated?

    You can keep most meat refrigerated in an airtight container up to the expiration date on the container. After the meat has been frozen and thawed, a good rule of thumb is 3-5 days. 

    Pro Tip

    Save your salami in the quantity you will use for charcuterie boards. I like to save the salami in rows of 12. That's about how many slices I will use for a charcuterie rose or short salami train.
