How to Freeze Cured Meat with a Vacuum Sealer

For best results, you'll want to remove excess air from the airtight container you store the salami in. Using a vacuum sealer like a Food Saver is my favorite way to do this.
Divide the salami into the portions you will most likely use down the road. Lay a small piece of parchment paper in between each portion. Then remove the air with your vacuum sealer and seal the bag.
Freezing Salami Without a Vacuum Sealer
If you don't have a vacuum sealer, you'll want to wrap the meat in plastic wrap to before placing it in an airtight container like a zip-top bag. You can add an extra layer of protection by using plastic wrap, then a layer of aluminum foil, then saving it in a plastic ziploc bag.
Thawing Out Frozen Charcuterie

The ideal way to that out frozen salami is overnight in the refrigerator. If you used a resealable bag, just take out the portion of salami or other lunch meat fro the bag. Transfer the portion to a different airtight container and keep it in the fridge until the next day.
If you didn't plan ahead, you can also lay out individual slices at room temperature and they should be ready to use within two hours.
Note: Do not refreeze genoa salami or meat for that matter after it has been frozen and thawed out already.
