    How to Make the Best Wet Beef Burrito Recipe

    A delicious wet beef burrito recipe combines a traditional beef burrito with a flavorful wet sauce and melted cheese for a major upgrade.

    I love saucy wet burritos. Texas has them at every Mexican restaurant. It's a stick to your ribs, ultimate comfort food meal. This wet burrito recipe combines beef and refried beans with a tasty red enchilada sauce and tons of melted cheese. 

    How to make the best version at home:

    1. Cook the ground beef low and slow for a long time after browning the meat.
    2. Don't be shy with a quality red sauce to pour over top.
    3. Use plenty of cheese that you grate yourself for the best melty cheese results.

    Easy Sauce Options

    Traditionally, red enchilada sauce is used for this recipe. Another great option is canned green enchilada sauce from the grocery store.

    Since you are on the hunt for the best homemade wet burrito you can make, you will need the best sauce. My favorite is pictured below.

    Smothered Burrito Ingredients

    • Large Soft Flour Tortillas
    • 1-2 Pounds Ground Beef
    • ¼ Taco Seasoning
    • 2 cups Shredded Cheddar Cheese 
    • 1 8 ounce can refried beans
    • 1-2 15 ounce cans of your favorite enchilada sauce

    Great toppings for your burritos after they come out of the oven include sour cream, diced avocado, chopped cilantro, green onions, or black olives. 

    Easy Homemade Taco Seasoning

    If you ran out of taco seasoning at home or you want to make your own quick version at home, grab a medium bowl and combine these spices:

    • 1 tablespoon Chili Powder
    • 2 teaspoon Ground Cumin
    • 1 teaspoon Salt
    • 1 teaspoon Garlic Powder
    • 1 teaspoon Onion Powder
    • 1 teaspoon Dried Oregano
    • 1 teaspoon Paprika
    • ½ teaspoon Black Pepper

    Baking Dish Options

    You have two options for how to bake this wet beef burrito recipe.

    1. You can bake them in small individual dishes.
    2. You can use a large 9x9 or 9x13 sized dish if you want to make several all in one place.

    How to Make the Wet Burrito

    1. Cook your ground beef in a large skillet over medium-high heat just like you would for a traditional burrito. 
    2. While you cook the meat mixture, preheat the oven to 350˚F and assemble the rest of the ingredients.
    3. Roll up the burritos by placing a large flour tortilla on a cutting board. Add a large scoop of the ground beef mixture, refried beans if desired and sprinkle with cheese.
    4. To fold the burrito, start by folding the sides of the tortilla on both sides halfway over the ground beef. Fold over the middle and roll up into a tight burrito. 
    5. Take the filled burrito and place seam side down in a large baking dish. Pour your wet sauce over the top. 
    6. Generously top the burritos with cheese and bake in the oven for 15-20 minutes or until the cheese has melted completely.
    7. Remove from the oven and serve. Try not to burn your mouth. 

    Serving The Complete Meal

    After the burritos have baked in the oven and the cheese has melted, serve the burritos with sour cream and garnish with green onions, avocado, or minced fresh cilantro. Here a few other great Tex-Mex side dishes:

    Recipe Modifications and Substitutions

    Substitute the flour for corn tortillas.

    Leave our the refried beans or use black beans instead.

    Make it spicy by adding hot sauce to the wet sauce.

    Saving and Reheating Leftovers

    You can save and reheat leftover wet burritos in an airtight container for up to 3 days in the refrigerator. When you are ready to reheat, use a medium heat setting on your microwave and heat for 60 seconds or until the center of the filling is warm. 

    For the best results, pour more burrito sauce and add extra shredded cheese to the top to add back some new life.

    • 1 pound ground beef
    • ¼ cup taco seasoning
    • 4 10" flour tortillas
    • 2 cups shredded cheese
    • 1 15 ounce refried beans
    • 1 15 ounce can of enchilada sauce
    • sour cream optional

    Instructions

    Prepare Ingredients

    • Preheat your oven to 375F.
    • Brown the ground beef in a large skillet. Cook until all of the moisture has cooked out and the meat carmelizes. Add 1 cup of water and 1 packet of taco seasoning. Reduce heat to medium-low and cook for 20 minutes. The water will reduce completely, leaving you with a moist and tender meat mixture.
    • While the meat is cooking, heat up the refried beans in the microwave for 1 minute. They dont need to heat completely, but just enough to soften so they are easy to spread. Do the same with the tortillas. They are more pliable when warmed up.
    • Open the can of enchilada sauce and get out the shredded cheese.

    Assemble the Burritos

    • Lay a warmed tortilla on a plate or cutting board.
    • Spread a layer of refried beans out for the base. Next, spoon on the cooked beef. Top with cheese. Roll the burrito by tucking in the ends and rolling up completely. Assemble all 4 burritos.
    • In a baking dish, pour a layer of enchilada sauce on the bottom of the dish. Lay each burrito in the baking dish. Pour on a generous layer of sauce to coat each burrito and top with cheese.
    • Bake the wet burritos uncovered for 15-20 minutes or until the cheese has melted completely and the sauce is bubbling.

    Notes

    If you're using a Site brand gluten free tortilla, it may break when folded. That's ok. It will still bake well and taste amazing. 
    If you're using a regular soft tortilla, it will fold well and hold up its shape no problem.
