    Ultimate Creamy Green Taco Sauce Recipe

    There is nothing better than rich meaty tacos topped with the perfect green taco sauce recipe. After several attempts at making the ultimate green sauce with a creamy consistency, I finally nailed it.

    This sauce is easy to make and comes together fast. You just need a few fresh ingredients from the grocery store and you'll have your new favorite sauce by tonight.

    Green Taco Sauce vs Salsa Verde

    When I started on my quest for the ultimate green taco sauce recipe, I was thrown for a loop. How come some recipes include fresh tomatillos and some don't? What I found is that some people say "salsa verde" when they really mean green taco sauce.

    Here's the real difference. Salsa verde recipes include tomatillos, fresh jalapeños, onion, and potentially a few other ingredients. This green salsa is blended, but still has some texture making it perfect for tortilla chips and a margarita. 

    Our favorite taco trucks serve a spicy green sauce that has fresh jalapeños as the base, along with a few other ingredients and it's turned into a completely smooth and creamy taco sauce. Today, we are focused on the taco sauce option. 

    How to Control the Heat for Your Taco Sauce

    Most of the flavor in this sauce comes from the roasted jalapeños. There are several ways to achieve the exact level of heat that you want for your sauce. If you want it on the milder side, remove the ribs and seeds from the inside of the jalapeños.

    If you want a medium-heat, use more jalapeños or leave some of the ribs and seeds in from one of the jalapeños. If you like to breathe fire and want your sauce to HOT, use the entire jalapeño or add a Serrano pepper as well. 

    I like my sauce with a bright hit of heat, but not so much that it burns. 

    If you're unsure about the best level of heat for your sauce, start small and add more jalapeño if needed. Remove the ribs and seeds from 2 roasted jalapenos and blend with the rest of your ingredients. If you want more, add more jalapeño or include some of the ribs and seeds.

    Simple Ingredients for Green Taco Sauce

    ​All of the ingredients for this taco sauce are easy to find in the grocery store. And for the most part, they are cheap! The only one that can get a little pricy is the avocado, but it's worth it. 

    • 1-2 Fresh Jalapeños (or more if you like it really spicy)
    • ½ cup White Onion 
    • ½ cup Avocado
    • 2-3 Garlic Cloves
    • Lime Juice from 2 limes
    • 2 tablespoon Fresh Cilantro (optional)
    • Olive Oil
    • Sea Salt

    For such a simple recipe, you only need a few kitchen staples. Check it out:

    Making Green Taco Truck Sauce Steps

    1. Roast the veggies on a sheet pan lined with parchment at 400F for 15 minutes.
    2. After the veggies have cooled off for a couple of minutes, transfer them to a blender with the avocado, lime juice, fresh cilantro, olive oil, and a pinch of salt. 
    3. Blend on high until the taco sauce has a creamy texture.
    4. Check for seasoning and add more salt if needed. 
    5. Transfer to an airtight container and refrigerate until you are ready to serve.

    How to Save Taco Sauce

    Now that you have a delicious sauce for many taco nights to come, let's cover proper storage. Save the prepared sauce in an airtight container for up to 5 days in the refrigerator. A squeeze bottle is perfect for both storage and using the next day with leftovers. I'm all about using this creamy green sauce on any kind of Mexican cuisine from fajitas to burrito bowls. 

    Recipe Modifications

    If you want more heat in your green creamy sauce, use Serrano peppers instead of in addition to fresh jalapenos. 

    For a milder sauce with a little less heat, use a poblano pepper with a 1-2 jalapeños. 

    Best Recipes to Use This Sauce

    First and foremost, my favorite is with carne asada tacos. The depth of flavor from the grilled marinated beef with the bright tang of our spicy sauce is next level. This recipe is also a great way to add extra flavor to marinated tequila lime chicken or grilled fajitas with all the fixings.

    Ingredients

    • 2 Fresh Jalapeños or more for spicier sauce
    • ½ cup White Onion
    • ½ cup Avocado
    • 2-3 Garlic Cloves
    • 2 Limes juiced
    • 2 tablespoon Fresh Cilantro optional
    • 2 tablespoon Olive Oil
    • ½ teaspoon Sea Salt

    Instructions

    • Preheat your oven to 400F.
    • Drizzle the jalapenos, onion, and peeled cloves of garlic with olive oil and spread out on a sheet pan. Place the sheet pan in the oven and cook at 400F for 15 minutes.
    • Remove the vegetables from the oven and allow to cool for 10-15 minutes. Read the note at the bottom regarding the level of heat for your sauce. Remove the ribs and seeds from the jalapenos for a milder taco sauce.
    • After the veggies have cooled off, transfer them to a blender with the avocado, lime juice, fresh cilantro, olive oil, and a pinch of salt.
    • Blend on high until the taco sauce has a creamy texture.
    • Check for seasoning and add more salt if needed.

    Notes

    To manage the level of heat in your taco sauce, start with 1 or 2 jalapenos with the seeds and ribs removed. After you combine the ingredients and blend the sauce, taste it to check for seasoning and heat. If you want more heat at this point, add another jalapeño or include the ribs and seeds that had been removed after roasting.
