For the bread, the best option is a soft bun or crusty roll that will hold up to the leftover meat. Next, we need a really good spread that complements the leftover pork tenderloin. For example, if I made a grilled BBQ pork tenderloin, I want to add a BBQ sauce and mayonnaise mixed together. If I made a garlic and herb crusted pork tenderloin, I will mix up a dijon mustard spread.

Cooking Your Pork Tenderloin

The most important thing you can do when cooking a pork tenderloin is to stop as soon as it hits the desired internal temperature of 145F. Overcooking the pork will dry it out.
My preference is grilling a well seasoned tender pork loin at 375F for 25 minutes. After the pork rests, I will very thinly slice it if I know I'm using it later for pork tenderloin sandwiches. Thin pork slices are so much easier to bite through.
If you are roasting the pork tenderloin in the oven, that's totally fine. After removing the roast from the oven and letting it rest, make sure to thinly slice the portion you plan to use on a sandwich.

First and foremost, we save leftovers in an airtight container in the refrigerator. You can wrap it in a zip top bag or save it in a glass snap ware container.

If you want a hot sandwich, the best way to warm up your leftover meat is in a hot skillet. Set a pan over medium heat and let it warm up for a minute. Add a tiny bit of olive oil or butter if you need to. Add the meat and let it warm through, flipping as needed. We just want to warm up the meat. Not cook it or dry it out.
