Then, they get loaded up with butter, cheese, heavy cream before this delicious side dish goes back in the smoker for round two. It's the ultimate side dish bringing maximum cheesy goodness and the perfect creamy texture.
Smoked Mashed Potatoes Ingredients

The best mashed potatoes have the perfect smooth and creamy texture with tons of flavor. You are going to get smooth creamy potatoes with tons of cheese and a little smoky flavor to boot.
- Russet Potatoes
- Heavy Cream
- Smoked Gouda (the secret ingredient)
- Cooked bacon bits
- Butter
- Kosher Salt and Black Pepper to taste
Smoked gouda is my favorite for this recipe. You can also get a little smoke flavor from smoked cheddar. If that's not important to you, other options are good melting cheeses like Monterey Jack.

You can mash by hand or use an electric hand mixer. There is no wrong answer. It just depend on the texture you want.
Stand mixer with whisk attachment- this will create a perfectly smooth and velvety texture
Large bowl with a potato masher by hand will lead to chunks of potato and more natural mash.
Baking sheet or large cutting board for removing the hot potatoes from the pellet grill.

Use room temperature ingredients for even cooking and easy mixing.
Cook time for the initial bake will depend on the size of the potatoes. Plan for more time if the potatoes are especially big.
Be mindful of the salt. The ingredients you choose to mix in the mashed potatoes will have an impact on the overall salt flavor. Salted butter, bacon, and cheese can all add quite a bit of salt.
How Many Potatoes Per Person?
The short answer is a Β½ pound per of potatoes per person.
One I thing I love about this recipe is that it can be easily adjusted depending on how many people you are serving OR if you want lots of yummy leftovers.
Just increase or decrease the potato filling ingredients as needed. Check seasoning to taste.
Step-By-Step Instructions

- Preheat your pellet grill to 375F.
- Wash all of the potatoes and poke them with a fork. Place the potatoes directly on the grill grates and cook until they are fork tender.
- When the potatoes are still warm but cool enough to handle, cut them in half and scoop out the potato flesh into the bowl of a stand mixer.
- Use the whisk attachment to mix the potatoes until they are smooth and add in the other ingredients.
- Transfer the potato mixture to a heat safe casserole dish or cast iron pan. Top with the remaining cheese and add back to the smoker.
- They will need to cook for 20-25 minutes or until the cheese is melted and golden brown.
- Drizzle with a little extra melted butter if desired before serving.
Temperature Modifications
If you are cooking a main dish at a lower temperature and need to get a head start, you can certainly put your potatoes on and smoke them for a longer time. Just finish at higher temperature when they go back on so the cheese gets a little browned on top.

More Cheesy Additions

4 Cheese- combine 3 ounces of cream cheese with a half cup each gruyere, white cheddar, and finish with a few tablespoons of parmesan. Feel free to add extra cheese to this one.
White Cheddar and Black Pepper- this new combo has me excited. Combine one cup of shredded white cheddar and add as much corse black pepper as you want.
Recipe Modifications
- Yukon Gold potatoes instead of russet potatoes. This will create a denser texture and with more flavor.
- Finish the potatoes with herbs like green onions, minced chives, or minced parsley.
- Bump up the spice flavor with a teaspoon of garlic powder and onion powder.
- Finish the top with a little parmesan cheese, bread crumbs, and melted butter for an au gratin potato side dish.
- Sour cream and cream cheese can also be added to modify the flavor and overall creaminess of the recipe.
Saving and Reheating Leftovers
Transfer the leftover potato casserole to an airtight container and save in the refrigerator for up to 5 days. Reheat a serving the microwave for 30 seconds, stir, and repeat until they have reached your desired temperature.
After the leftover potatoes have cooled in the refrigerator, you can save them in vacuum sealed freezer bags. To reheat frozen mashed potatoes, take the package out of the refrigerator the night before or a few hours before you want to eat them. Reheat them in the microwave in one minute intervals stirring between each minute until they are hot.

- 8 tablespoon Butter (one stick)
- ΒΎ cup Heavy Cream or more depending on your desired consistency
- 1 cup Smoked Gouda the secret ingredient
- 6 slices Crispy bacon bits
- Kosher Salt and Black Pepper to taste
Instructions
- Preheat your pellet grill to 375F.

- Remove the potatoes and let them cool for 10-15 minutes until they are cool enough to handle.
- Cut the potatoes in half and use a spoon to scoop the potato flesh into the bowl of a stand mixer.
- Use the whisk attachment to mix the potatoes until they are smooth.
- Add all of the other ingredients to the potato mixture and fold together until everything is combined.
- Transfer the potato filling to a heat safe casserole dish or cast iron pan. Top with the remaining cheese and add back to the smoker.
- They will need to cook for 30 minutes or until the cheese is melted and golden brown.
- Drizzle with a little extra melted butter if desired before serving.
