Benefits of Baking on the Traeger
It's a hot summer day and you want to keep all of that heat out of your house. I like to bake our delicious dessert out on the Traeger before I make dinner. You will get perfect results with a crispy edge and gooey inside time after time with this recipe.
Favorite Boxed Brownie Mix

When I do make a dessert, it needs to be a simple recipe. Using a good boxed brownie mix keeps this dessert quick and easy.
My favorite chocolate brownie mix is Ghirardelli. The flavor and texture just can't be beat. You can use whatever your favorite box of brownie mix. This method with work for any, even gluten free.
For any brownie mix, you'll need:
- 1 box brownie mix
- 1 room temperature egg
- vegetable oil
- water
Making Mini Skillets
One prepared box of brownie mix perfectly fills 4 mini skillets that are 6 inches in diameter. The 4 skillets hardly take up any cooking space too and all fit in just half of a Traeger Ironwood. Cast iron skillets with hold onto the heat, so even after the skillet cools, you will have hot brownies with a gooey center.

What Kind of Wood Pellets
For the wood pellets, I have a few recommendations. The first is to use a blend. I like the inexpensive premium wood pellets from Costco because of the low cost and mild flavor that they produce.
The other choices for an optimal wood pellet cherry or apple wood pellets. Anything like hickory or mesquite will produce the wrong flavor that we are going for in this recipe.
How to Make these Brownies Step by Step

- Preheat your Traeger Pellet Grill to 325˚ degrees f.
- Spray a lite coating of nonstick cooking spray in the mini cast iron skillets.
- In a large bowl, follow the package directions for making the brownies. Start with the wet ingredients first by combining the egg, oil, and water.
- Then add the package of dry ingredients and mix the batter really well.
- Pour the batter into the skillets and place in the Traeger directly on the grill grate.
- Cook the brownies for 30-35 minutes with the lid closed.
- To check for doneness, poke a toothpick in the middle of the brownies. If the toothpick comes out clean, the brownies are done.
Serving Your Traeger Brownies

If I am making these skillet brownies, we are definitely turning them into sundaes. Once the skillets are cool enough to handle you can start dressing them up. I add a BIG scoop of ice cream, top that with whipped cream, and add a couple tablespoons of caramel sauce to bring it all together.
Make sure to keep extra caramel available on the side!
Saving Leftovers
If you don't finish all of the brownies, remove them from the mini skillets and transfer them to an airtight container. These are served best reheated in the microwave for 15-20 seconds.
Recipe Modifications
If you don't have mini cast iron skillets, you can absolutely use a baking dish and modify the time. They will take a little longer on the Traeger than they would in the oven. Check them with a toothpick for doneness around the 45-50 minute mark. If you do use a baking dish, I recommend lining it with parchment paper so the brownies are easier to remove.
If you want to turn up the chocolate flavor, you can add chopped chocolate, dark chocolate chips, or white chocolate chips to the brownie batter. When I do this, I add them to the top after 20-25 minutes of baking so that they don't sink to the bottom of my dish.
