Traeger Chicken Enchilada Dip has become one of my favorite weekend appetizers for game days. This dip is loaded up with tender shredded chicken, a mixture of cheese, and brought together with delicious red enchilada sauce. You can also dress it up or keep it simple. But no matter what, it will make your taste buds happy!

The Flavors of Cheesy Chicken Enchilada Dip
When you are needing a delicious and perfect shareable dip recipe for your game day crowd, this one checks all of the boxes. Tender juicy chicken combined with melted cheese and the great flavor of enchilada sauce really hit the spot. Taco seasoning and green chiles bump up that tex-me flavor.
You can assemble the dip ahead of and just pop directly on your grill grates when you are ready to eat.
It's a delicious dip served hot, but can hang out at room temperature if needed. Served with crunchy tortilla chips makes it the perfect combination for flavor and texture.
Smoked Enchilada Dip Ingredients

As a busy mom with a hungry family, hearty food that is easy to make is my saving grace. These ingredients are super simple and easy to pull together. They are also all picky eater approved which is a big deal to me.
To make traeger chicken enchilada dip, you will need:
- 2Β cups shredded chicken (depending on how many people you want to serve)
- 8 ounce block cream cheese
- 2 cups shredded cheese - Monterey Jack cheese, pepper jack cheese, or shredded cheddar cheese are all great choices for thisΒ
- diced green chile peppers
- 1 cup of canned enchilada sauce
- 1 tablespoon taco seasoning
- tortilla chips for serving - grab a sturdy chip for dipping because this is a hearty dip
What Kind of Chicken to Use
You can really use any kind of chicken for this recipe. For the sake of saving time, a rotisserie chicken from the grocery store is a great option. I tend to use grilled chicken because I always have it in my fridge ready to go. Lastly, you can also poach 2 chicken breasts in salted water seasoned with garlic powder and chili powder if you like.
Supples for Making Your Dip

These are basic everyday supplies. If you have a pellet grill, I am sure you are in good shape.
- Pellet Smoker
- Medium or Large bowl depending on how much you are making
- 10" cast iron pan or 9x9 baking dish
Step-By-Step Dip Instructions

- Preheat your Traeger or other pellet smoker to 350F
- Prepare the shredded chicken if it is not already shredded and measure the other ingredients.
- In a medium bowl, combine shredded chicken, room temperature cream cheese, 1 and Β½ cups of shredded cheese, taco seasoning, green chiles, and a 1 cup of canned enchilada sauce.
- Mix the ingredients until well combined and transfer into your cast iron pan or baking dish. Top with the remainder of the shredded cheese.
- Set the prepared dip directly on the Traeger grill grate and close the lid. Cook the dip for 30-35 minutes or until the cheese is totally melted and bubbly.
- Remove and serve with tortilla chips.

Saving and Reheating Dip
This chicken enchilada dip reheats really well. Just transfer the dip to an airtight container and store in the refrigerator for up to 4 days. Reheat the dip in the microwave in 30 second installments, stirring in between each interval. It should only take a minute and a half total depending on how much dip you have to reheat.
Recipe Modifications and Optional Additions for Enchilada Dip
Here are a few toppings and additional options to kick up the heat, texture, and variety. All optional of course.
Black beans - drained and rinsed black beans for texture
Diced jalapeno pepper for some added heat
A few dashes of your favorite hot sauce is also a welcome addition
Green enchilada sauce instead of red if you are like me and love all chicken enchiladas.
Optional toppings and garnishes: green onions, diced avocado, chopped cilantro, sour cream or black olives

Equipment

Ingredients
- 2 cups shredded chicken
- 8 ounces cream cheese
- 2 cups monterey jack cheese
- 1 cup enchilada sauce
- 4 ounce diced green chiles
- 1 tablespoon taco seasoning

Instructions
- Preheat your Traeger or other pellet smoker to 350F
- Prepare the shredded chicken if it is not already shredded.
- In a medium bowl, combine shredded chicken, room temperature cream cheese, 1 Β½ cups shredded cheese, taco seasoning, green chiles, and a 1 cup of canned enchilada sauce.
- Mix the ingredients together until they are well combined and transfer into your cast iron pan or baking dish. Add the last Β½ cup of shredded cheese to the top of the dip.
- Set the prepared dip directly on the Traeger grill grate and close the lid. Cook the dip for 30 minutes or until the cheese is totally melted and bubbly.
- Remove and serve with tortilla chips.
