When I started on my quest for the ultimate green taco sauce recipe, I was thrown for a loop. How come some recipes include fresh tomatillos and some don't? What I found is that some people say "salsa verde" when they really mean green taco sauce.
Here's the real difference. Salsa verde recipes include tomatillos, fresh jalapeños, onion, and potentially a few other ingredients. This green salsa is blended, but still has some texture making it perfect for tortilla chips and a margarita.
Our favorite taco trucks serve a spicy green sauce that has fresh jalapeños as the base, along with a few other ingredients and it's turned into a completely smooth and creamy taco sauce. Today, we are focused on the taco sauce option.
How to Control the Heat for Your Taco Sauce
Most of the flavor in this sauce comes from the roasted jalapeños. There are several ways to achieve the exact level of heat that you want for your sauce. If you want it on the milder side, remove the ribs and seeds from the inside of the jalapeños.
If you want a medium-heat, use more jalapeños or leave some of the ribs and seeds in from one of the jalapeños. If you like to breathe fire and want your sauce to HOT, use the entire jalapeño or add a Serrano pepper as well.
I like my sauce with a bright hit of heat, but not so much that it burns.
If you're unsure about the best level of heat for your sauce, start small and add more jalapeño if needed. Remove the ribs and seeds from 2 roasted jalapenos and blend with the rest of your ingredients. If you want more, add more jalapeño or include some of the ribs and seeds.

- ½ cup Avocado
- 2-3 Garlic Cloves
- Lime Juice from 2 limes
- 2 tablespoon Fresh Cilantro (optional)
- Olive Oil
- Sea Salt

- Roast the veggies on a sheet pan lined with parchment at 400F for 15 minutes.
- After the veggies have cooled off for a couple of minutes, transfer them to a blender with the avocado, lime juice, fresh cilantro, olive oil, and a pinch of salt.
- Blend on high until the taco sauce has a creamy texture.
- Check for seasoning and add more salt if needed.
- Transfer to an airtight container and refrigerate until you are ready to serve.

Recipe Modifications
If you want more heat in your green creamy sauce, use Serrano peppers instead of in addition to fresh jalapenos.
For a milder sauce with a little less heat, use a poblano pepper with a 1-2 jalapeños.

- 2 Fresh Jalapeños or more for spicier sauce
- ½ cup White Onion
- ½ cup Avocado
- 2-3 Garlic Cloves
- 2 Limes juiced
- 2 tablespoon Fresh Cilantro optional
- 2 tablespoon Olive Oil
- ½ teaspoon Sea Salt
Instructions
- Preheat your oven to 400F.
- Drizzle the jalapenos, onion, and peeled cloves of garlic with olive oil and spread out on a sheet pan. Place the sheet pan in the oven and cook at 400F for 15 minutes.
- Remove the vegetables from the oven and allow to cool for 10-15 minutes. Read the note at the bottom regarding the level of heat for your sauce. Remove the ribs and seeds from the jalapenos for a milder taco sauce.
- After the veggies have cooled off, transfer them to a blender with the avocado, lime juice, fresh cilantro, olive oil, and a pinch of salt.
- Blend on high until the taco sauce has a creamy texture.
- Check for seasoning and add more salt if needed.
